History
more than sixty years Ago, Pachicu Quintana and his wife, Maria Oyarbide opened in the Old Part of San Sebastian his first restaurant: THE PACHICU QUINTANA. A restaurant that soon stood out among others, for its exquisite traditional cuisine, in addition to the successful career of its owner - Pachicu II - as a pelotari of great international prestige.

In 1962 their children Pachi and Nugget Echeburúa, they are responsible to continue the family tradition. With the great help and expertise of her mother, Mary Oyarbide. With this recognition of the quality of food and the family atmosphere, PACHICU QUINTANA inaugurated in the '80s, the restaurant in Artíes (Aran Valley), marking a milestone in the Pyrenees thanks to the daily service of fresh fish from San Sebastian.

In 1999 the third generation “gastronomic” of the Quintana, Joseba, inaugurates a new PACHICU QUINTANA in Madrid. you
